Description
A fresh and quick salad featuring strawberries and spinach, topped with a sweet balsamic glaze.
Ingredients

- 1 cup balsamic vinegar
- 2–3 tablespoons maple syrup or date syrup
- 10 oz fresh baby spinach
- 3 cups strawberries, cleaned and sliced
- 1 cup blueberries
- ⅓ cup crumbled cheese (optional)
- 1 cup pecans, toasted
Instructions
- In a small saucepan, combine balsamic vinegar and maple syrup.
- Heat over medium heat, bring to a gentle boil, then reduce to simmer. Stir until the mixture thickens and reduces by about half (10–12 minutes).
- Remove from heat and let cool. The glaze will thicken further as it cools.
- In a large bowl, combine spinach, strawberries, blueberries, and cheese (if using). Toss gently.
- Divide into individual serving bowls.
- Top each serving with toasted pecans.
- Drizzle balsamic glaze over the top before serving.
Notes
- This salad can be served immediately or chilled.
- Adjust the sweetness of the glaze to your taste.
