These 3 Ingredient Shortbread Cookies are simple to make and delicious. Perfect for any occasion.

- 1 cup salted butter (softened)
- ½ cup icing/powdered sugar
- 2 cups all purpose flour
Instructions
- In a stand mixer or with a hand beater, cream the butter and sugar for 1-2 minutes until light and fluffy.
- Add the flour and mix on low until the dough starts to come together.
- On a lightly floured surface, form the dough into a ball. Wrap in plastic wrap and refrigerate for at least 60 minutes.
- Roll the dough to about ¼-½ inch thick and cut out with cookie cutters. Place on a cookie sheet and refrigerate while heating the oven.
- Preheat oven to 325F (160C).
- Bake for 10-12 minutes until edges are lightly golden. Cool on the cookie sheet for a bit, then transfer to a wire rack to cool completely.
Notes
- If the dough is too dry, add a tablespoon of butter to bring it together.
- Using fruit/caster sugar may require rolling the dough into a log before chilling.
- Store baked cookies in an airtight container at room temperature for up to a week or in the fridge for up to 10 days.
- To freeze, place parchment paper between layers of cookies or freeze on a cookie sheet before transferring to bags or containers. They last up to a month.
