Description

Delicious mini cheesecakes with apple filling and a crumb topping.


Ingredients

  • 1½ tablespoons sugar
  • ½ teaspoon cinnamon
  • 3 tablespoons unsalted butter, melted
  • ⅓ cup all-purpose flour
  • ⅓ cup light brown sugar
  • ⅓ cup quick-cooking oats
  • ¾ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 2½ tablespoons unsalted butter, melted
  • 2 medium-small apples, peeled and finely chopped
  • 2 teaspoons fresh lemon juice
  • 1½ teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 2 tablespoons light brown sugar
  • 1½ teaspoons cornstarch
  • 10 oz cream cheese, softened
  • 6 tablespoons sugar
  • 1½ teaspoons vanilla extract
  • 2 teaspoons all-purpose flour
  • 1 large egg
  • Caramel sauce for serving

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Line a standard muffin pan with 9 paper liners.
  3. Mix graham cracker crumbs, sugar, and cinnamon.
  4. Stir in melted butter until evenly moistened.
  5. Press about 2 tablespoons of crust mixture into each liner.
  6. Chill in the refrigerator while preparing fillings.
  7. Combine flour, brown sugar, oats, cinnamon, and nutmeg for the crumb topping.
  8. Add melted butter and stir until coarse crumbs form.
  9. Refrigerate until ready to use.
  10. Beat cream cheese, sugar, vanilla, and flour until smooth for the cheesecake layer.
  11. Add egg and mix just until combined.
  12. Spoon cheesecake filling over crusts, filling each cup about ⅔ full.
  13. Toss chopped apples with lemon juice.
  14. Add brown sugar, cornstarch, cinnamon, and nutmeg; mix well.
  15. Spoon apples over cheesecake filling, gently pressing them down.
  16. Generously sprinkle crumb topping over each cup.
  17. Bake for 28–30 minutes, until set.
  18. Cool in the pan for 30 minutes, then transfer to the refrigerator.
  19. Drizzle with caramel sauce before serving.

Notes

  • Best served chilled.
  • Store covered in the refrigerator for up to 4 days.
  • These cups also freeze well (without caramel) for up to 2 months.
