Delicious mini cheesecakes with apple filling and a crumb topping.
Ingredients

- ¾ cup graham cracker crumbs
- 1½ tablespoons sugar
- ½ teaspoon cinnamon
- 3 tablespoons unsalted butter, melted
- ⅓ cup all-purpose flour
- ⅓ cup light brown sugar
- ⅓ cup quick-cooking oats
- ¾ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- 2½ tablespoons unsalted butter, melted
- 2 medium-small apples, peeled and finely chopped
- 2 teaspoons fresh lemon juice
- 1½ teaspoons cinnamon
- ¼ teaspoon nutmeg
- 2 tablespoons light brown sugar
- 1½ teaspoons cornstarch
- 10 oz cream cheese, softened
- 6 tablespoons sugar
- 1½ teaspoons vanilla extract
- 2 teaspoons all-purpose flour
- 1 large egg
- Caramel sauce for serving
Instructions
- Preheat oven to 325°F (165°C).
- Line a standard muffin pan with 9 paper liners.
- Mix graham cracker crumbs, sugar, and cinnamon.
- Stir in melted butter until evenly moistened.
- Press about 2 tablespoons of crust mixture into each liner.
- Chill in the refrigerator while preparing fillings.
- Combine flour, brown sugar, oats, cinnamon, and nutmeg for the crumb topping.
- Add melted butter and stir until coarse crumbs form.
- Refrigerate until ready to use.
- Beat cream cheese, sugar, vanilla, and flour until smooth for the cheesecake layer.
- Add egg and mix just until combined.
- Spoon cheesecake filling over crusts, filling each cup about ⅔ full.
- Toss chopped apples with lemon juice.
- Add brown sugar, cornstarch, cinnamon, and nutmeg; mix well.
- Spoon apples over cheesecake filling, gently pressing them down.
- Generously sprinkle crumb topping over each cup.
- Bake for 28–30 minutes, until set.
- Cool in the pan for 30 minutes, then transfer to the refrigerator.
- Drizzle with caramel sauce before serving.
Notes
- Best served chilled.
- Store covered in the refrigerator for up to 4 days.
- These cups also freeze well (without caramel) for up to 2 months.
