Description

Delicious and nutritious banana bread overnight oats for a quick breakfast.

Ingredients

Scale
  • ½ ripe banana, mashed
  • ½ cup rolled oats (regular or gluten free)
  • ½ cup milk of choice
  • 2 Tbsp chopped pecans or walnuts
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • Dash of sea salt
  • 1 Tbsp ground flax (optional)
  • 2 tsp 100% pure maple syrup

Instructions

  1. Mash the banana in the bottom of a bowl or sealable jar.
  2. Add all remaining ingredients and stir well to combine.
  3. Refrigerate overnight or for at least 4 hours.
  4. Serve cold or warmed, garnished with sliced banana or extra nuts if desired.

Notes

  • Sweeten to taste; the banana adds natural sweetness, so the maple syrup can be adjusted or added just before serving.
  • Best eaten within 3 days. For longer storage, add the banana closer to serving time.
  • Use certified gluten-free oats if needed.
