- 2 cups cooked rice
- 1 lb chicken breast, grilled and sliced
- 1 cup sweet corn, grilled
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/4 cup cilantro, chopped
- 1/2 cup cotija cheese, crumbled
- 1 lime, juiced
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions and set aside.
- Grill the chicken breast until fully cooked, then slice it into strips.
- Grill the sweet corn until charred, then cut the kernels off the cob.
- In a large bowl, combine the cooked rice, grilled chicken, sweet corn, red onion, bell pepper, and cilantro.
- Drizzle with lime juice and sprinkle with chili powder, salt, and pepper.
- Toss everything together until well mixed.
- Serve in bowls and top with crumbled cotija cheese.
