- 2 cups fresh blackberries
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon butter, cut into small pieces
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine blackberries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Gently toss to coat the blackberries.
- Pour the blackberry mixture into the pie crust and dot with butter.
- Cover with a second pie crust or create a lattice top. Seal the edges and cut slits in the top crust for steam to escape.
- Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the pie cool before serving.
Notes
- For a sweeter pie, adjust the sugar according to the tartness of the blackberries.
- Serve with whipped cream or vanilla ice cream for added flavor.
- Store leftovers in the refrigerator for up to 3 days.
