Blueberry Baked Oatmeal: 5 Ways to Warm Your Heart

Description

A warm and comforting Blueberry Baked Oatmeal that is perfect for breakfast or a snack.


Ingredients

  • ⅔ cup roughly chopped pecans
  • 2 cups old-fashioned oats
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ¾ teaspoon fine-grain sea salt (or ½ teaspoon regular table salt)
  • ¼ teaspoon ground nutmeg
  • 1 ¾ cups milk of choice (almond milk, coconut milk, oat milk or cow’s milk)
  • ⅓ cup maple syrup or honey
  • 2 large eggs or flax eggs
  • 3 tablespoons melted unsalted butter or coconut oil, divided
  • 2 teaspoons vanilla extract
  • 12 ounces or 1 pint fresh or frozen blueberries
  • 2 teaspoons raw sugar (optional)
  • Optional toppings: plain/vanilla yogurt, whipped cream, additional maple syrup or honey, additional fresh fruit

Instructions

  1. Preheat the oven to 375 degrees. Grease a 9-inch square baking dish.
  2. Toast the nuts on a rimmed baking sheet for 4 to 5 minutes until fragrant.
  3. In a medium bowl, combine oats, toasted nuts, cinnamon, baking powder, salt, and nutmeg. Whisk to combine.
  4. In a smaller bowl, whisk together milk, maple syrup or honey, eggs, half of the butter or coconut oil, and vanilla.
  5. Reserve ½ cup of berries for topping. Arrange remaining berries in the baking dish.
  6. Cover the berries with the dry oat mixture. Drizzle wet ingredients over the oats.
  7. Gently pat down any dry oats. Scatter remaining berries on top. Sprinkle with raw sugar if desired.
  8. Bake for 42 to 45 minutes until golden. Let cool for a few minutes.
  9. Drizzle remaining melted butter on top before serving.
  10. Serve warm, at room temperature, or chilled.

Notes

  • For vegan, use non-dairy milk, flax eggs, and coconut oil.
  • For nut free, skip the nuts or use pepitas instead.
