Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 1 cup unsalted butter, cut into pieces
  • 1 1/4 cups brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tablespoon vanilla extract
  • 1 tablespoon plain Greek yogurt
  • 18 soft caramels, cut in half
  • Flaked sea salt, for topping
  • 1/4 cup granulated sugar (for cinnamon sugar)
  • 2 teaspoons ground cinnamon (for cinnamon sugar)

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, cream of tartar, cinnamon, and salt. Set aside.
  2. In a skillet over medium heat, melt the butter while whisking frequently. Continue cooking until browned specks form and the butter smells nutty. Remove from heat and cool to room temperature.
  3. In a stand mixer bowl, combine the cooled brown butter and sugars. Mix until blended.
  4. Add the egg, egg yolk, vanilla extract, and Greek yogurt. Mix until combined.
  5. Gradually add the dry ingredients and mix until just combined.
  6. Form the dough into a ball, cover, and chill for at least 30 minutes (up to 2 days).
  7. Preheat oven to 350°F. Line a baking sheet with parchment paper or a baking mat.
  8. Scoop about 2 tablespoons of dough and roll into balls. Flatten slightly and place a caramel piece in the center. Wrap the dough around the caramel, fully enclosing it.
  9. In a small bowl, mix the sugar and cinnamon. Roll each dough ball in the mixture and place on the baking sheet 2 inches apart. Sprinkle tops with flaked sea salt.
  10. Bake for 8–10 minutes, until edges are lightly golden and centers are soft. Do not overbake.
  11. Let cookies rest on the baking sheet for 2–3 minutes before transferring to a wire rack to cool completely.

Notes

  • Watch the butter carefully while browning to prevent burning.
  • Dough can be prepared ahead and chilled for up to 48 hours.
  • Cookies will appear soft when removed from the oven but will set as they cool.
