Ingredients

  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onions until translucent.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the diced potatoes, vegetable broth, thyme, and rosemary. Bring to a boil.
  4. Reduce heat and let it simmer for about 20 minutes, or until the potatoes are tender.

  6. Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
  7. Season with salt and pepper to taste.
