A warm and hearty Chicken Pot Pie Soup that combines all the flavors of a classic pot pie in a comforting soup form.
Ingredients

- 1 lb chicken breast, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup potatoes, diced
- 1 cup frozen peas
- 1 onion, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- 2 tbsp olive oil
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add onions, carrots, and celery; sauté until softened.
- Add diced chicken and cook until no longer pink.
- Stir in flour and cook for 1-2 minutes.
- Add chicken broth, potatoes, thyme, and rosemary; bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in heavy cream and frozen peas; cook for an additional 5 minutes.
- Season with salt and pepper to taste before serving.
Notes
- For a thicker soup, add more flour.
- Can substitute heavy cream with half-and-half for a lighter version.
- Feel free to add other vegetables like corn or green beans.
