A creamy and cheesy chicken spaghetti dish that’s easy to make and delicious.

- 2 small boneless skinless chicken breasts
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 tablespoons butter
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 4 tablespoons flour
- 1 ½ cups chicken broth
- ¾ cup milk
- 4 oz cream cheese, softened
- 1 cup cheddar cheese, shredded
- 10 oz diced tomatoes with green chilies
- ½ lb thin spaghetti
- 1 cup mozzarella cheese, shredded
- Red pepper flakes, for garnish
- Chopped parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Slice chicken breasts in half lengthwise. Pat dry and season with salt, pepper, and Italian seasoning.
- Heat olive oil over medium-high heat and sear chicken for 5–6 minutes per side.
- Remove, let cool slightly, then dice into bite-sized pieces.
- Reduce heat to medium-low. Melt butter in the same pot and scrape up browned bits from the bottom.
- Add diced onion and cook for 4 minutes until softened. Add garlic and cook for 1 minute.
- Sprinkle flour over onions, stir, and cook for 2 minutes.
- Slowly add chicken broth in splashes, stirring constantly. Gradually add milk and whisk until smooth.
- Let sauce simmer gently. Add softened cream cheese and stir until fully melted.
- Reduce heat to low and allow sauce to cool slightly, then stir in cheddar cheese.
- Drain diced tomatoes if desired, then add tomatoes and cooked chicken to the sauce.
- Cook spaghetti according to package directions and drain.
- Stir spaghetti into the sauce. Transfer to a greased 9×13-inch baking dish if needed.
- Top with mozzarella cheese and bake uncovered for 15 minutes.
- Broil for 1–2 minutes until lightly golden (watch closely).
- Garnish with red pepper flakes and parsley. Serve hot.
Notes
- You can substitute 2 cups cooked or rotisserie chicken.
- Shred cheese from a block for best melting.
- Add cheddar only after the sauce cools slightly to avoid grainy texture.
- Thin spaghetti works best, but other pasta shapes can be used.
