Description

Ingredients

  • 2 small boneless skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 4 tablespoons flour
  • 1 ½ cups chicken broth
  • ¾ cup milk
  • 4 oz cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 10 oz diced tomatoes with green chilies
  • ½ lb thin spaghetti
  • 1 cup mozzarella cheese, shredded
  • Red pepper flakes, for garnish
  • Chopped parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice chicken breasts in half lengthwise. Pat dry and season with salt, pepper, and Italian seasoning.
  3. Heat olive oil over medium-high heat and sear chicken for 5–6 minutes per side.
  4. Remove, let cool slightly, then dice into bite-sized pieces.
  5. Reduce heat to medium-low. Melt butter in the same pot and scrape up browned bits from the bottom.
  6. Add diced onion and cook for 4 minutes until softened. Add garlic and cook for 1 minute.
  7. Sprinkle flour over onions, stir, and cook for 2 minutes.
  8. Slowly add chicken broth in splashes, stirring constantly. Gradually add milk and whisk until smooth.
  9. Let sauce simmer gently. Add softened cream cheese and stir until fully melted.
  10. Reduce heat to low and allow sauce to cool slightly, then stir in cheddar cheese.
  11. Drain diced tomatoes if desired, then add tomatoes and cooked chicken to the sauce.
  12. Cook spaghetti according to package directions and drain.
  13. Stir spaghetti into the sauce. Transfer to a greased 9×13-inch baking dish if needed.
  14. Top with mozzarella cheese and bake uncovered for 15 minutes.
  15. Broil for 1–2 minutes until lightly golden (watch closely).
  16. Garnish with red pepper flakes and parsley. Serve hot.

Notes

  • You can substitute 2 cups cooked or rotisserie chicken.
  • Shred cheese from a block for best melting.
  • Add cheddar only after the sauce cools slightly to avoid grainy texture.
  • Thin spaghetti works best, but other pasta shapes can be used.
