Delicious homemade chocolate fudge that is rich and creamy.

- 1 cup butter (2 sticks)
- 1 ¼ cups milk chocolate chips
- 1 ¼ cups semi-sweet chocolate chips
- 1 teaspoon vanilla extract
- 1 (12-ounce) can evaporated milk
- 4 cups granulated sugar
- 2 ¼ cups mini marshmallows
Instructions
- In a large mixing bowl, combine butter, milk chocolate chips, semi-sweet chocolate chips, and vanilla. Set aside.
- Line a 9×13-inch pan with parchment paper.
- In a very large heavy-bottom saucepan, combine evaporated milk, sugar, and mini marshmallows. Cook over medium heat, stirring constantly. Scrape the sides and bottom frequently to dissolve sugar and prevent burning.
- Bring to a boil and cook for about 10 minutes (or until the mixture reaches ~234°F on a candy thermometer). The fudge should be light golden brown.
- Pour the hot mixture into the prepared chocolate bowl. Use an electric mixer to gently combine until the chocolate and butter are melted and smooth.
- Pour into the prepared pan and spread evenly. Chill completely in the refrigerator.
- Once cooled, lift the fudge out of the pan using the parchment edges. Cut into squares, bricks, or desired shapes. Wrap in plastic wrap and aluminum foil for storage.
Notes
- Use high-quality chocolate (e.g., Ghirardelli or Guittard) for best melting.
- At high altitudes, reduce fudge temperature by 2°F per 1,000 ft elevation.
- Airtight container at room temp for 2 weeks, or in fridge for 1 month.
- Wrap fudge tightly and freeze for 3-6 months.
- Peppermint Fudge: Replace vanilla with 1 teaspoon peppermint extract.
- Rocky Road Fudge: Stir in 1 cup mini marshmallows and 1 handful nuts before pouring into pan.
- Marbled Fudge: Use half white chocolate chips; melt separately with butter and vanilla, then swirl both chocolates in the pan.
- Fold in 1 cup of walnuts, pecans, or favorite nuts before setting.
