Instructions

  1. In a large mixing bowl, combine butter, milk chocolate chips, semi-sweet chocolate chips, and vanilla. Set aside.
  2. Line a 9×13-inch pan with parchment paper.
  3. In a very large heavy-bottom saucepan, combine evaporated milk, sugar, and mini marshmallows. Cook over medium heat, stirring constantly. Scrape the sides and bottom frequently to dissolve sugar and prevent burning.
  4. Bring to a boil and cook for about 10 minutes (or until the mixture reaches ~234°F on a candy thermometer). The fudge should be light golden brown.
  5. Pour the hot mixture into the prepared chocolate bowl. Use an electric mixer to gently combine until the chocolate and butter are melted and smooth.
  6. Pour into the prepared pan and spread evenly. Chill completely in the refrigerator.
  7. Once cooled, lift the fudge out of the pan using the parchment edges. Cut into squares, bricks, or desired shapes. Wrap in plastic wrap and aluminum foil for storage.
