Delicious Chocolate Mint Oreo Cookies with a rich chocolate flavor and a hint of mint.
Ingredients

- 2 1/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsweetened cocoa powder
- 1 cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1 cup light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup chopped mint chocolate sandwich cookies
- 3/4 cup semi-sweet chocolate chips
- 3/4 cup mint chocolate chips or chopped mint chocolates
- Flaky sea salt, for sprinkling
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, sift together flour, baking soda, salt, and cocoa powder.
- In a large bowl, cream butter and sugars until smooth. Add eggs and vanilla; mix well.
- Add dry ingredients and mix on low until just combined. Do not overmix.
- Stir in chopped mint sandwich cookies, chocolate chips, and mint chocolate pieces.
- Drop dough onto prepared baking sheet, spacing about 2 inches apart.
- Bake for 10 minutes, until edges are set and centers are soft.
- Let cookies rest on the baking sheet for 3–5 minutes, then transfer to a cooling rack. Sprinkle lightly with flaky sea salt.
Notes
- Use any mint chocolate sandwich cookie that does not contain restricted ingredients.
- Do not overbake; cookies will continue to set as they cool.
- Store in an airtight container for up to 4 days.
