- 6 tablespoons salted butter
- ½ cup light brown sugar, packed
- ½ cup granulated sugar
- ½ cup sweetened condensed milk
- ½ cup light corn syrup
- ½ teaspoon vanilla extract
- 2 cups pecan halves
- 16 oz almond bark or high-quality chocolate
Instructions
- Preheat to 350°F (175°C).
- Spread pecans on a baking sheet and toast for 5–10 minutes, stirring once. Let cool and chop.
- Prepare a baking sheet with parchment paper or a Silpat liner.
- In a large microwave-safe bowl, melt butter.
- Stir in brown sugar, granulated sugar, sweetened condensed milk, and corn syrup.
- Microwave on HIGH for 6–8 minutes until caramel reaches about 235°F.
- Carefully remove from microwave, stir in vanilla extract, and chopped pecans.
- Drop spoonfuls of the mixture onto the lined baking sheet. Refrigerate for 20 minutes.
- Melt almond bark or chocolate in the microwave, stirring every 30 seconds.
- Dip each pecan cluster in melted chocolate and place back on parchment paper to set.
- Store turtles in an airtight container at room temperature or in the fridge for 2–3 weeks.
Notes
- Cooking times vary by microwave wattage; adjust as needed.
- Almond bark sets well at room temperature. Use high-quality chocolate for smooth melting.
- Freeze on a parchment-lined sheet for 1 hour, then transfer to a freezer bag for 2–3 months.
