Description

Ingredients

  • 6 tablespoons salted butter
  • ½ cup light brown sugar, packed
  • ½ cup granulated sugar
  • ½ cup sweetened condensed milk
  • ½ cup light corn syrup
  • ½ teaspoon vanilla extract
  • 2 cups pecan halves
  • 16 oz almond bark or high-quality chocolate

Instructions

  1. Preheat to 350°F (175°C).
  2. Spread pecans on a baking sheet and toast for 5–10 minutes, stirring once. Let cool and chop.
  3. Prepare a baking sheet with parchment paper or a Silpat liner.
  4. In a large microwave-safe bowl, melt butter.
  5. Stir in brown sugar, granulated sugar, sweetened condensed milk, and corn syrup.
  6. Microwave on HIGH for 6–8 minutes until caramel reaches about 235°F.
  7. Carefully remove from microwave, stir in vanilla extract, and chopped pecans.
  8. Drop spoonfuls of the mixture onto the lined baking sheet. Refrigerate for 20 minutes.
  9. Melt almond bark or chocolate in the microwave, stirring every 30 seconds.
  10. Dip each pecan cluster in melted chocolate and place back on parchment paper to set.
  11. Store turtles in an airtight container at room temperature or in the fridge for 2–3 weeks.

Notes

  • Cooking times vary by microwave wattage; adjust as needed.
  • Almond bark sets well at room temperature. Use high-quality chocolate for smooth melting.
  • Freeze on a parchment-lined sheet for 1 hour, then transfer to a freezer bag for 2–3 months.
