  • ½ cup brown sugar (for streusel)
  • 1 cup powdered sugar (for icing)
  • 1 tsp butter, melted (for icing)
  • 12 Tbsp milk (for icing)
  • ½ tsp vanilla extract (for icing)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and pumpkin pie spice. Set aside.
  3. In a separate bowl, cream softened butter with brown sugar and white sugar until light and fluffy.
  4. Add egg, milk, and vanilla; beat until incorporated. Mix in pumpkin purée until smooth.
  5. Gradually add dry ingredients and mix just until combined—do not overmix.
  6. Spread batter evenly into prepared pan.
  7. Combine flour, brown sugar, and cinnamon for streusel. Cut in cold butter until crumbly.
  8. Sprinkle streusel evenly over batter.
  9. Bake for 27–32 minutes, until topping is golden and a toothpick comes out clean.
  10. Cool for about 10 minutes.
  11. Whisk icing ingredients together, adjusting milk for desired consistency. Drizzle over cake.
  12. Serve warm or at room temperature.
