- 2 large eggs
- 1 cup grated Parmesan cheese
- 1 cup whole milk cottage cheese
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 lb orzo pasta
- 4 cups vegetable or chicken broth
Instructions
- In a blender or mini food processor, combine cottage cheese, Parmesan, eggs, a pinch of salt, and black pepper. Blend until very smooth. Set aside.
- In a medium pot over medium-high heat, add the orzo and broth. Cook, stirring often, for 12–15 minutes until the liquid is absorbed and the orzo is al dente.
- Remove the pot from heat. Stir in the blended cheese mixture until fully incorporated and creamy. Taste and adjust salt and pepper as needed.
- Serve hot while creamy and smooth.

- Stir continuously while cooking the orzo to prevent sticking.
