  • 1 cup grated Parmesan cheese
  • 1 cup whole milk cottage cheese
  • Kosher salt, to taste

  • 1 lb orzo pasta
  • 4 cups vegetable or chicken broth

Instructions

  1. In a blender or mini food processor, combine cottage cheese, Parmesan, eggs, a pinch of salt, and black pepper. Blend until very smooth. Set aside.
  2. In a medium pot over medium-high heat, add the orzo and broth. Cook, stirring often, for 12–15 minutes until the liquid is absorbed and the orzo is al dente.
  3. Remove the pot from heat. Stir in the blended cheese mixture until fully incorporated and creamy. Taste and adjust salt and pepper as needed.
