Description

Creamy Taco Soup is a delicious and comforting dish that combines the flavors of tacos in a creamy, hearty soup.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic to the pot, cooking until the onion is translucent.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, and chicken broth.
  4. Bring the mixture to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir in the heavy cream and shredded cheese, cooking until the cheese is melted and the soup is heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped cilantro.
