- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 cups carrots, sliced
- 1 cup celery, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 bay leaf
- 8 ounces egg noodles
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crockpot.
- Add the chicken broth, carrots, celery, onion, garlic, thyme, parsley, and bay leaf.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove the chicken, shred it, and return it to the pot.
- Add the egg noodles and cook for an additional 30 minutes on high until noodles are tender.
- Remove the bay leaf before serving.
Notes
- For a richer flavor, use homemade chicken broth.
- Feel free to add other vegetables like peas or corn.
