- 2 lbs beef chuck, cut into bite-sized pieces
- 4 medium potatoes, diced
- 1/2 cup unsalted butter
- 6 cloves garlic, minced
- 1 onion, chopped
- 1 cup beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
Instructions
- In a large bowl, combine the beef, salt, pepper, thyme, and rosemary.
- Place the diced potatoes and chopped onion in the bottom of the crockpot.
- Add the seasoned beef on top of the potatoes and onions.
- In a saucepan, melt the butter over medium heat and add the minced garlic, cooking until fragrant.
- Pour the garlic butter over the beef and vegetables in the crockpot.
- Add the beef broth to the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
- Serve hot and enjoy!
