Description
An easy and delicious banana magic cake with a custard layer.
Ingredients

- 1/2 cup unsalted butter – melted and slightly cooled
- 1 Tablespoon water
- 2 cups milk – lukewarm
- 4 eggs – separated
- ¾ cup sugar
- 2 tablespoons light brown sugar
- ½ cup mashed banana (1 medium banana)
- 1 cup flour
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat the oven to 325°F. Lightly grease an 8×8 inch baking dish and set aside.
- Whip the egg whites until stiff peaks form, then set aside.
- Beat the egg yolks and sugars until pale yellow.
- Mix in melted butter and water for about 2 minutes until evenly combined.
- Add mashed banana and mix just to combine.
- Incorporate flour until evenly mixed.
- Slowly beat in the milk and vanilla extract until well combined.
- Fold in the egg whites one-third at a time until fully incorporated.
- Pour the batter into the pan and bake for 45-60 minutes until barely jiggly in the center.
- Cool the cake completely before dusting with powdered sugar.
Notes
- The batter is very thin.
- Cover with aluminum foil if the top browns too quickly.
- Even cooled, the cake will be slightly jiggly due to the custard layer.
