Ingredients

  • 1/2 cup unsalted butter – melted and slightly cooled
  • 1 Tablespoon water
  • 2 cups milk – lukewarm
  • 4 eggs – separated
  • ¾ cup sugar
  • 2 tablespoons light brown sugar
  • ½ cup mashed banana (1 medium banana)
  • 1 cup flour
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 325°F. Lightly grease an 8×8 inch baking dish and set aside.
  2. Whip the egg whites until stiff peaks form, then set aside.
  3. Beat the egg yolks and sugars until pale yellow.
  4. Mix in melted butter and water for about 2 minutes until evenly combined.
  5. Add mashed banana and mix just to combine.
  6. Incorporate flour until evenly mixed.
  7. Slowly beat in the milk and vanilla extract until well combined.
  8. Fold in the egg whites one-third at a time until fully incorporated.
  9. Pour the batter into the pan and bake for 45-60 minutes until barely jiggly in the center.
  10. Cool the cake completely before dusting with powdered sugar.

Notes

  • The batter is very thin.
  • Cover with aluminum foil if the top browns too quickly.
  • Even cooled, the cake will be slightly jiggly due to the custard layer.
