Ingredients

  • 1 cup coarse cornmeal
  • 1/3 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 3 tablespoons unsalted butter, melted and cooled
  • 3 tablespoons vegetable oil
  • 2 large eggs, lightly beaten
  • 1 cup frozen corn kernels

Instructions

  1. Preheat oven to 400°F. Grease an 8×8-inch baking pan with nonstick spray.
  2. In a large bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt.
  3. In a medium bowl, whisk buttermilk, melted butter, oil, and eggs.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Batter will be slightly lumpy.
  5. Stir in the corn kernels. Pour batter into prepared pan.
  6. Bake for 25–30 minutes, until the top is golden and a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 15 minutes before cutting into squares.

Notes

  • Do not overmix the batter; this keeps the cornbread tender.
  • Best served warm with butter or honey.
  • Store covered at room temperature for up to 2 days.
