Easy Cornbread recipe that is quick to prepare and delicious.

- 1 cup all-purpose flour
- 1 cup coarse cornmeal
- 1/3 cup granulated sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 3 tablespoons unsalted butter, melted and cooled
- 3 tablespoons vegetable oil
- 2 large eggs, lightly beaten
- 1 cup frozen corn kernels
Instructions
- Preheat oven to 400°F. Grease an 8×8-inch baking pan with nonstick spray.
- In a large bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt.
- In a medium bowl, whisk buttermilk, melted butter, oil, and eggs.
- Pour wet ingredients into dry ingredients and stir until just combined. Batter will be slightly lumpy.
- Stir in the corn kernels. Pour batter into prepared pan.
- Bake for 25–30 minutes, until the top is golden and a toothpick inserted in the center comes out clean.
- Cool in the pan for 15 minutes before cutting into squares.
Notes
- Do not overmix the batter; this keeps the cornbread tender.
- Best served warm with butter or honey.
- Store covered at room temperature for up to 2 days.
