  • 1 package rolled pie crust (2-count, ~7.5 oz total) or double your favorite homemade crust
  • 1 cup + 2 Tbsp jam or preserves (any flavor)
  • 1 large egg (for egg wash)
  • 1 cup powdered sugar
  • 23 Tbsp milk or cream
  • 2 Tbsp jam
  • ½ tsp vanilla extract

Instructions

  1. Preheat to 400°F (205°C). Line a baking sheet with parchment paper.
  2. Unroll pie crust onto parchment. Cut into 3 x 5 inch rectangles.
  3. Gather scraps, knead together, roll thin (just under ¼ inch), and cut additional rectangles.
  4. Beat egg in a small bowl.
  5. Place half the rectangles on the baking sheet. Spoon 1½ Tbsp jam into the center of each.
  6. Brush edges with egg wash, top with another rectangle, pinch to seal, then crimp edges with a fork.
  7. Poke a few holes in the top and brush with egg wash.
  8. Bake for 12–15 minutes, until golden brown. Cool completely.
  9. Whisk icing ingredients until smooth. Spread over cooled pop-tarts.
  10. Enjoy fresh or store in an airtight container up to 2 days.
