Easy Homemade Pop Tarts with Pie Crust

- 1 package rolled pie crust (2-count, ~7.5 oz total) or double your favorite homemade crust
- 1 cup + 2 Tbsp jam or preserves (any flavor)
- 1 large egg (for egg wash)
- 1 cup powdered sugar
- 2–3 Tbsp milk or cream
- 2 Tbsp jam
- ½ tsp vanilla extract
Instructions
- Preheat to 400°F (205°C). Line a baking sheet with parchment paper.
- Unroll pie crust onto parchment. Cut into 3 x 5 inch rectangles.
- Gather scraps, knead together, roll thin (just under ¼ inch), and cut additional rectangles.
- Beat egg in a small bowl.
- Place half the rectangles on the baking sheet. Spoon 1½ Tbsp jam into the center of each.
- Brush edges with egg wash, top with another rectangle, pinch to seal, then crimp edges with a fork.
- Poke a few holes in the top and brush with egg wash.
- Bake for 12–15 minutes, until golden brown. Cool completely.
- Whisk icing ingredients until smooth. Spread over cooled pop-tarts.
- Enjoy fresh or store in an airtight container up to 2 days.
Notes
- Yield: About 8–10 pop-tarts, depending on size
- Don’t overfill — jam will leak
- Seal well for best results (pinch + fork crimp)
- Flavor ideas: Strawberry, raspberry, cherry, apricot, mixed berry, or homemade chia jam
- Best eaten same day, still great the next
