Description

A simple and delicious recipe for Persian Koobideh Kabobs made with a blend of ground lamb and beef, seasoned with aromatic spices.

Ingredients

Scale
  • 1 medium onion peeled and grated (red or white)
  • 1 lb lean ground lamb
  • 1 lb lean ground beef (90/10 mix)
  • 4 cloves garlic peeled and finely chopped
  • 2 tbsp parsley finely chopped
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • ground sumac (optional)
  • 1 lemon (optional)
  • toum garlic spread (optional)

Instructions

  1. In a large bowl, combine the grated onion, ground lamb, ground beef, chopped garlic, parsley, salt, black pepper, turmeric, and paprika.
  2. Mix the ingredients thoroughly until well combined.
  3. Cover the mixture and let it marinate in the refrigerator for at least 1 hour.
  4. Preheat your grill or broiler to medium-high heat.
  5. Shape the meat mixture onto skewers, pressing it firmly to ensure it holds together.
  6. Grill the kabobs for about 10-15 minutes, turning occasionally, until they are cooked through and have a nice char.
  7. Serve the kabobs with optional ground sumac, lemon wedges, and toum garlic spread.

Notes

  • For best results, use a mix of lamb and beef for flavor and texture.
  • Soaking wooden skewers in water for 30 minutes can prevent them from burning on the grill.
  • Feel free to adjust the spices according to your taste preferences.
