  • 1 teaspoon ground cinnamon (optional)
  • Vegetable oil or sunflower oil for frying
  • Powdered sugar, for dusting (optional)

Instructions

  1. In a large bowl, whisk together flour, sugar, salt, and baking powder.
  2. Add cold butter and cut it into the flour until the mixture resembles coarse crumbs.
  3. Stir in vanilla extract if using.
  4. Add cold water 1 tablespoon at a time, mixing just until the dough comes together.
  5. Turn dough onto a floured surface and knead gently until smooth. Do not overwork.
  6. Wrap in plastic wrap and refrigerate for 30 minutes.
  7. In a saucepan, combine fruit, sugar, cornstarch, lemon juice, and cinnamon.
  8. Cook over medium heat, stirring often, until thickened and the fruit is soft (about 10 minutes).
  9. Remove from heat and let cool slightly.
  10. Roll chilled dough on a floured surface to ⅛-inch thickness.
  11. Cut into 4–5 inch circles using a cutter or glass.
  12. Spoon 1–2 tablespoons of filling into the center of each circle.
  13. Fold dough over to form a half-moon.
  14. Press edges together and crimp with a fork to seal.
  15. Heat about 2 inches of oil in a deep skillet to 350°F (175°C).
  16. Fry pies in batches for 2–3 minutes per side, until golden brown.
  17. Remove and drain on paper towels.
  18. Let cool slightly and dust with powdered sugar if desired.
  19. Serve warm for best texture and flavor.
