A delicious and easy-to-make Garlic Parmesan Crockpot Chicken and Potatoes dish that is perfect for busy weeknights.

- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a bowl, mix together olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper.
- Place the halved baby potatoes in the bottom of the crockpot.
- Lay the chicken breasts on top of the potatoes.
- Pour the garlic Parmesan mixture over the chicken and potatoes.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, marinate the chicken in the garlic mixture for a few hours before cooking.
- Feel free to add other vegetables like carrots or green beans.
- Leftovers can be stored in the refrigerator for up to 3 days.
