  • ½ large red onion

  • 4 hamburger buns
  • Hot honey, for drizzling
  • 2 ripe peaches, thinly sliced
  • 4 slices cooked beef, halved
  • 1 cup arugula

Instructions

  1. Place each chicken breast in a freezer bag or between parchment paper. Gently pound to ½-inch thickness. Cut into 4 equal pieces.
  2. In a small bowl, combine salt, paprika, garlic powder, and black pepper. Season chicken on both sides.
  3. Preheat grill to medium-high heat and lightly oil the grates. Grill chicken for 3–5 minutes per side, depending on thickness.
  4. Place a slice of cheese on each piece and cook about 1 minute more, until melted. Ensure the chicken reaches 165°F. Transfer to a platter, cover with foil, and let rest for 5–10 minutes.
  5. Cut the red onion into wedges, keeping the root intact. Brush with olive oil and season with salt and pepper. Grill for 8–10 minutes, turning once, until tender.
  6. Toast the buns cut-side down on the grill during the last minute.
  7. Assemble sandwiches: place chicken on the bottom bun, drizzle with hot honey, add grilled onions, peach slices, beef, and arugula. Add the top bun and serve.
