- 2 large boneless skinless chicken breasts
- 1 teaspoon kosher salt
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon black pepper
- Olive oil, for brushing the grill
- 4 slices provolone cheese (or mozzarella or Havarti)
- ½ large red onion
- Olive oil, for brushing

- 4 hamburger buns
- Hot honey, for drizzling
- 2 ripe peaches, thinly sliced
- 4 slices cooked beef, halved
- 1 cup arugula
Instructions
- Place each chicken breast in a freezer bag or between parchment paper. Gently pound to ½-inch thickness. Cut into 4 equal pieces.
- In a small bowl, combine salt, paprika, garlic powder, and black pepper. Season chicken on both sides.
- Preheat grill to medium-high heat and lightly oil the grates. Grill chicken for 3–5 minutes per side, depending on thickness.
- Place a slice of cheese on each piece and cook about 1 minute more, until melted. Ensure the chicken reaches 165°F. Transfer to a platter, cover with foil, and let rest for 5–10 minutes.
- Cut the red onion into wedges, keeping the root intact. Brush with olive oil and season with salt and pepper. Grill for 8–10 minutes, turning once, until tender.
- Toast the buns cut-side down on the grill during the last minute.
- Assemble sandwiches: place chicken on the bottom bun, drizzle with hot honey, add grilled onions, peach slices, beef, and arugula. Add the top bun and serve.
Notes
- Store grilled chicken in an airtight container in the fridge for up to 4 days.
- Store beef in a paper towel-lined container to keep it crisp.
- Grilled onions can be reheated gently before serving.
- Fully assembled sandwiches are best fresh but can be wrapped and refrigerated for up to 1 day and reheated in a toaster oven.
