Ingredients

  • 1 Tbsp sesame oil (or preferred cooking oil)
  • 23 garlic cloves, minced
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce (low sodium)
  • 12 Tbsp sriracha
  • 23 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt (adjust to taste)
  • 2 tsp cornstarch
  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha
  • 1 tsp rice vinegar
  • 2 tsp honey
  • Cooked rice (optional)
  • Shredded carrots (optional)
  • Sliced cucumbers (optional)
  • Shelled edamame (optional)
  • Pickled onions (optional)
  • Avocado (optional)
  • Shredded cabbage (optional)
  • Green onions (optional)
  • Sesame seeds (optional)

Instructions

  1. Make the sauce: Whisk all bang bang sauce ingredients in a small bowl. Adjust spice or sweetness to taste. Chill until ready to use.
  2. Cook the turkey: Heat sesame oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, until browned and fully cooked.
  3. Reduce heat to medium-low. Add garlic, ginger, paprika, onion powder, soy sauce, sriracha, chicken broth, honey, pepper, and salt. Simmer 2–3 minutes.
  4. Sprinkle cornstarch over the mixture and stir until thickened. Optionally stir in 2 Tbsp of the bang bang sauce.
  5. Assemble bowls: Add rice and desired toppings to bowls. Spoon turkey mixture on top and drizzle with bang bang sauce. Garnish as desired.

Notes

  • Store turkey and sauce separately in airtight containers.
  • Turkey keeps 3–4 days refrigerated; sauce up to 1 week.
  • The turkey mixture can be frozen for up to 3 months.
  • If the turkey becomes dry, add a splash of broth or soy sauce when reheating.
