Description

Healthy Breakfast Egg Muffins are a nutritious and easy-to-make meal perfect for busy mornings.


Ingredients

  • 6 eggs
  • 1/2 cup skim milk
  • 1 dash Italian seasoning
  • 1 teaspoon garlic powder
  • Salt & pepper to taste
  • 2 cups (packed) fresh baby spinach chopped finely
  • 5 ounces mushrooms chopped finely

Instructions

  1. Preheat oven to 350F and move the rack to the middle of the oven. Grease a 12-muffin tin thoroughly.
  2. In a medium mixing bowl, add the eggs, milk, Italian seasoning, garlic powder, and salt & pepper. Whisk together thoroughly.
  3. Chop the spinach and mushrooms, and stir them into the egg mixture.
  4. Spoon the egg mixture equally into each cavity of the muffin tin.
  5. Bake for 20 minutes.
  6. Let them cool thoroughly before storing in an airtight container in the fridge for up to 5 days.
