Instructions
- Preheat to 425°F. Line a 12-count muffin pan with liners or spray with nonstick spray.
- In a medium bowl, combine mashed bananas, maple syrup, Greek yogurt, egg, milk, peanut butter, and vanilla until smooth.
- In a large bowl, whisk together flour, cinnamon, baking soda, baking powder, and salt.
- Pour wet ingredients into dry ingredients and stir gently until just combined. Avoid overmixing.
- Evenly distribute batter into muffin cups (an ice cream scoop works well).
- Bake at 425°F for 5 minutes, then reduce oven temperature to 350°F and bake for an additional 12 minutes, or until a toothpick inserted comes out clean.
- Allow muffins to cool completely before serving or freezing.
