- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup unsweetened applesauce
- 1/2 cup milk (or non-dairy alternative)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup diced ripe pears
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix together applesauce, milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the diced pears.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack.
Notes
- For added sweetness, consider adding a handful of chopped nuts or chocolate chips.
