Description

A sweet treat combining coconut, marshmallows, and almonds, covered in chocolate.


Ingredients

  • 1 ⅓ cups mini marshmallows (or about 13 regular marshmallows)
  • ½ cup light corn syrup
  • Pinch of salt
  • 8 oz shredded coconut (sweetened or unsweetened)
  • 1 tsp vanilla extract
  • 2530 whole almonds (roasted preferred)
  • 12 oz good quality semi-sweet chocolate (or almond bark)

Instructions

  1. In a medium saucepan, combine corn syrup, marshmallows, and salt.
  2. Cook over medium heat, stirring constantly until marshmallows are melted.
  3. Stir for about 1 more minute.
  4. Remove from heat, stir in shredded coconut and vanilla.
  5. Transfer to a bowl, cover, and refrigerate for at least 1 hour.
  6. Line a baking sheet with parchment paper.
  7. Scoop chilled coconut mixture into small logs.
  8. Press a whole almond on top of each log.
  9. Place in fridge or freezer while melting the chocolate.
  10. Chop chocolate and melt in a microwave-safe bowl in 20-second increments.
  11. Dip each coconut log into melted chocolate.
  12. Lift with a fork and tap to remove excess.
  13. Place on a lined parchment tray and allow chocolate to set.
