Description
A sweet treat combining coconut, marshmallows, and almonds, covered in chocolate.
Ingredients
Scale
- 1 ⅓ cups mini marshmallows (or about 13 regular marshmallows)
- ½ cup light corn syrup
- Pinch of salt
- 8 oz shredded coconut (sweetened or unsweetened)
- 1 tsp vanilla extract
- 25–30 whole almonds (roasted preferred)
- 12 oz good quality semi-sweet chocolate (or almond bark)
Instructions
- In a medium saucepan, combine corn syrup, marshmallows, and salt.
- Cook over medium heat, stirring constantly until marshmallows are melted.
- Stir for about 1 more minute.
- Remove from heat, stir in shredded coconut and vanilla.
- Transfer to a bowl, cover, and refrigerate for at least 1 hour.
- Line a baking sheet with parchment paper.
- Scoop chilled coconut mixture into small logs.
- Press a whole almond on top of each log.
- Place in fridge or freezer while melting the chocolate.
- Chop chocolate and melt in a microwave-safe bowl in 20-second increments.
- Dip each coconut log into melted chocolate.
- Lift with a fork and tap to remove excess.
- Place on a lined parchment tray and allow chocolate to set.
Notes
- Homemade Mounds Bars: Skip the almonds to make coconut-only bars.
- Store in an airtight container at room temperature or in the fridge for up to 1 week.
- Store in a freezer-safe container for up to 3 months.
