Ingredients

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 28 oz plum tomatoes
  • 1 bay leaf
  • 1 tsp Italian seasoning
  • 34 tbsp fresh parsley, roughly chopped
  • ¼ tsp salt

Instructions

  1. Heat olive oil in a saucepan over medium heat. Add garlic and cook for 1 minute until fragrant.
  2. Blend plum tomatoes using an immersion blender, blender, or food mill.
  3. Add tomatoes, bay leaf, Italian seasoning, parsley, and salt to the saucepan. Stir to combine.
  4. Simmer for about 15 minutes, or until ready to serve.

Notes

  • This recipe yields 28 oz of sauce, enough for about 1 lb (16 oz) of pasta. Nutrition is per serving; recipe makes 6 servings.
  • Optional additions:
  • Thinly sliced beef (about 2 oz): Sauté in olive oil for 5 minutes to flavor the pan, discard, then proceed with garlic.
  • Finely diced onion (3 tbsp): Cook in olive oil for 3 minutes before adding garlic.
  • Fresh basil: Add 6 sliced leaves at the end of cooking.
  • Fresh tomatoes can be used; skins can be removed by briefly broiling halved tomatoes until skins loosen.
