- 1 whole chicken (about 3–4 pounds)
- 8 cups of water
- 2 cups of carrots, sliced
- 2 cups of celery, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried parsley
- Salt and pepper to taste
- 8 ounces of egg noodles
Instructions
- In a large pot, combine the whole chicken and water. Bring to a boil over medium-high heat.
- Reduce heat and simmer for about 1 hour, skimming off any foam that rises to the surface.
- Add carrots, celery, onion, garlic, thyme, parsley, salt, and pepper to the pot.
- Continue to simmer for another 30 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and let it cool. Once cool, shred the chicken into bite-sized pieces.
- Add the egg noodles to the pot and cook according to package instructions.
- Return the shredded chicken to the pot and stir to combine. Adjust seasoning if necessary.
- Serve hot and enjoy your comforting bowl of chicken noodle soup!
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
- For a richer flavor, you can roast the chicken before adding it to the pot.
