- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 8 oz lasagna noodles, broken into pieces
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add chopped onion and minced garlic, cooking until the onion is translucent.
- Stir in crushed tomatoes, broth, broken lasagna noodles, basil, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for about 20 minutes, or until noodles are tender.
- Stir in ricotta cheese until well combined.
- Serve hot, topped with shredded mozzarella cheese and fresh basil.

- For a vegetarian version, substitute ground beef with mushrooms or lentils.
