Description

Soft and chewy matcha cookies.


Ingredients

  • 2½ cups all purpose flour
  • 2½ tablespoons matcha powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1½ tablespoons brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg, room temperature
  • ½ cup coarse sugar, such as turbinado

Instructions

  1. Preheat the oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, whisk together flour, sifted matcha powder, baking soda, baking powder, and kosher salt and set aside.
  3. In a separate large mixing bowl, cream together butter, granulated sugar, and brown sugar until smooth and fluffy, about 1 to 2 minutes. Add the vanilla and egg and mix until combined. Use a silicone baking spatula to scrape the sides of the mixing bowl.
  4. Gradually add in the dry ingredients and mix until just combined. Do not over-mix the dough.
  5. Place the coarse sugar in a shallow bowl. Use a small ice cream scooper or tablespoon to scoop the dough and form 1.7 tablespoon (26 ml) cookie dough balls. Roll each ball in the sugar until covered and place onto prepared cookie sheets, leaving 1½-2 inches between each cookie.
  6. Bake for 8 to 10 minutes until soft in the middle and edges turn slightly golden. Let rest for 5 minutes on the cookie sheet, then transfer to a wire cooling rack.

Notes

  • Store baked cookies in an air-tight container in a cool, dry place for up to 5-7 days.
  • Freeze cookies for up to a month. Let them reach room temperature, place in a storage bag, press out air, and seal. Thaw in the fridge or on the counter. To warm, heat oven to 300°F and warm for 2 to 3 minutes.
