- 10 oz mushrooms (button or baby bella)
- 2 tablespoons butter
- 2 large boneless skinless chicken breasts
- Salt and pepper, to taste
- ½ cup all-purpose flour
- 3–4 tablespoons olive oil
- 2 ½ cups beef broth
- 1 chicken bouillon cube (or 1 teaspoon concentrated bouillon)
- 1 teaspoon soy sauce
- 1 teaspoon onion powder
- ½ teaspoon mustard powder
- ½ teaspoon dried thyme
- 3 cloves garlic, minced
- 3 tablespoons cornstarch
- 3 tablespoons cold water
- ⅓ cup heavy cream
Instructions
- Combine beef broth, bouillon, soy sauce, onion powder, mustard powder, and thyme. Set aside.
- Mix cornstarch with cold water and set aside.
- Clean and slice mushrooms if needed.
- Slice chicken lengthwise into thinner cutlets and lightly pound to about ½-inch thickness.
- Melt butter in a pan over medium-high heat and sauté mushrooms in batches until golden, about 3–4 minutes per side. Remove and set aside.
- Season chicken with salt and pepper, dredge lightly in flour, and shake off excess.
- Heat olive oil in the same pan and sear chicken for 4–5 minutes per side until golden. Remove and set aside.
- Lower heat to medium, remove excess oil but keep browned bits.
- Add garlic and a small splash of broth, scraping the pan to release flavor. Simmer 1–2 minutes.
- Add remaining broth mixture and simmer for 10 minutes.
- Stir in cornstarch mixture until sauce thickens. Reduce heat to low.
- Add cream, then mushrooms.
- Return chicken and juices to the pan, spoon sauce over top, cover partially, and simmer 5 minutes. Serve hot.
Notes
- If you prefer a thinner sauce, add a splash of broth.
- Mushrooms are cooked separately to improve flavor and texture.
- Serve with mashed potatoes, buttered noodles, or rice.
