Ingredients

  • 10 oz mushrooms (button or baby bella)
  • 2 tablespoons butter
  • 2 large boneless skinless chicken breasts
  • Salt and pepper, to taste
  • ½ cup all-purpose flour
  • 34 tablespoons olive oil
  • 2 ½ cups beef broth
  • 1 chicken bouillon cube (or 1 teaspoon concentrated bouillon)
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder
  • ½ teaspoon mustard powder
  • ½ teaspoon dried thyme
  • 3 cloves garlic, minced
  • 3 tablespoons cornstarch
  • 3 tablespoons cold water
  • ⅓ cup heavy cream

Instructions

  1. Combine beef broth, bouillon, soy sauce, onion powder, mustard powder, and thyme. Set aside.
  2. Mix cornstarch with cold water and set aside.
  3. Clean and slice mushrooms if needed.
  4. Slice chicken lengthwise into thinner cutlets and lightly pound to about ½-inch thickness.
  5. Melt butter in a pan over medium-high heat and sauté mushrooms in batches until golden, about 3–4 minutes per side. Remove and set aside.
  6. Season chicken with salt and pepper, dredge lightly in flour, and shake off excess.
  7. Heat olive oil in the same pan and sear chicken for 4–5 minutes per side until golden. Remove and set aside.
  8. Lower heat to medium, remove excess oil but keep browned bits.
  9. Add garlic and a small splash of broth, scraping the pan to release flavor. Simmer 1–2 minutes.
  10. Add remaining broth mixture and simmer for 10 minutes.
  11. Stir in cornstarch mixture until sauce thickens. Reduce heat to low.
  12. Add cream, then mushrooms.
  13. Return chicken and juices to the pan, spoon sauce over top, cover partially, and simmer 5 minutes. Serve hot.

Notes

  • If you prefer a thinner sauce, add a splash of broth.
  • Mushrooms are cooked separately to improve flavor and texture.
  • Serve with mashed potatoes, buttered noodles, or rice.
