Ingredients

  • 10 oz mushrooms (button or baby bella), sliced
  • 2 tbsp salted butter
  • 2 large boneless skinless chicken breasts, sliced into cutlets
  • Salt and black pepper, to taste
  • ½ cup all-purpose flour
  • 34 tbsp olive oil
  • 2½ cups beef broth
  • 1 chicken bouillon cube (or 1 tsp concentrated bouillon)
  • 1 tsp soy sauce
  • 1 tsp onion powder
  • ½ tsp each: mustard powder, dried thyme
  • ½ cup chicken broth
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 3 tbsp cornstarch
  • ⅓ cup heavy cream

Instructions

  1. Combine beef broth, bouillon, soy sauce, onion powder, mustard powder, and thyme. Set aside. Mix cornstarch with 3 tbsp cold water and set aside.
  2. Melt butter in a skillet over medium-high heat. Add mushrooms and cook undisturbed 3–4 minutes per side until golden. Remove and set aside.
  3. Season chicken with salt and pepper, dredge lightly in flour.
  4. Heat olive oil in the same skillet and sear chicken 4–5 minutes per side until golden. Remove and set aside.
  5. Reduce heat to medium. Add chicken broth, butter, and garlic. Scrape up browned bits and simmer 3–4 minutes.
  6. Add prepared broth mixture and simmer 10 minutes.
  7. Stir in cornstarch slurry until thickened. Reduce heat to low and add cream and mushrooms.
  8. Return chicken to the pan, spoon sauce over top, partially cover, and simmer 5 minutes. Serve warm.

  • Cooking mushrooms separately enhances their flavor and texture.
  • Keep heat low when adding cream to prevent separation.
  • Serve with mashed potatoes, buttered noodles, or roasted vegetables.
