Instructions
- Preheat the oven to 350°F (175°C) and grease a Twinkie pan.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk and vanilla extract.
- Fold in the diced peaches and cinnamon.
- Spoon the batter into the prepared Twinkie pan, filling each cavity about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, fill with whipped cream or your favorite filling if desired.
