- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups sliced fresh peaches
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, mix the sliced peaches with brown sugar and lemon juice, then set aside.
- In a separate bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk and vanilla extract.
- In another bowl, combine the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Place a spoonful of the peach mixture at the bottom of each muffin cup.
- Pour the cake batter over the peaches, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before inverting onto a serving plate.
Notes
- For a richer flavor, use brown sugar in the cake batter.
- These mini cakes can be served warm or at room temperature.
- Store leftovers in an airtight container for up to 3 days.
