Description
Peanut Butter Rice Krispie Treats are a delightful no-bake dessert combining marshmallows, peanut butter, and Rice Krispies, topped with chocolate.
Ingredients
Scale
- 1/4 cup unsalted butter
- 1 (10 oz) bag mini marshmallows (about 5 cups)
- 1/2 cup peanut butter
- 6 cups Rice Krispies cereal
- 8 oz chocolate chips (about 1 1/3 cups)
- 2 teaspoons vegetable oil
Instructions
- Lightly grease a 9×13-inch pan with butter or non-stick spray.
- In a large saucepan, melt the butter, mini marshmallows, and peanut butter over low heat, stirring gently until smooth.
- Remove from heat and fold in the Rice Krispies until evenly coated.
- Press the mixture firmly into the prepared pan (lightly spray hands with cooking spray to prevent sticking).
- For the chocolate topping, place chocolate chips in a microwave-safe bowl. Microwave in 45-second intervals on medium power, stirring between intervals until smooth. Stir in the vegetable oil.
- Pour the melted chocolate over the pressed cereal mixture and spread evenly. Let harden at room temperature for about 2 hours.
- Slice into squares and store in an airtight container at room temperature.
Notes
- For softer, chewier bars, reduce Rice Krispies to 5 1/2 cups.
- Store at room temperature in an airtight container for up to 3 days.
