Description

Peanut Butter Rice Krispie Treats are a delightful no-bake dessert combining marshmallows, peanut butter, and Rice Krispies, topped with chocolate.


Ingredients

  • 1/4 cup unsalted butter
  • 1 (10 oz) bag mini marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispies cereal
  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Lightly grease a 9×13-inch pan with butter or non-stick spray.
  2. In a large saucepan, melt the butter, mini marshmallows, and peanut butter over low heat, stirring gently until smooth.
  3. Remove from heat and fold in the Rice Krispies until evenly coated.
  4. Press the mixture firmly into the prepared pan (lightly spray hands with cooking spray to prevent sticking).
  5. For the chocolate topping, place chocolate chips in a microwave-safe bowl. Microwave in 45-second intervals on medium power, stirring between intervals until smooth. Stir in the vegetable oil.
  6. Pour the melted chocolate over the pressed cereal mixture and spread evenly. Let harden at room temperature for about 2 hours.
  7. Slice into squares and store in an airtight container at room temperature.

Notes

  • For softer, chewier bars, reduce Rice Krispies to 5 1/2 cups.
  • Store at room temperature in an airtight container for up to 3 days.
