Description

Pecan Sandies are delightful cookies with a crumbly texture and a nutty flavor.


Ingredients

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 2 cups all-purpose flour
  • ¼ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • ¾ cup pecans, finely chopped
  • 2 Tablespoons granulated sugar

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cream butter and powdered sugar together in a large bowl.
  3. Add flour, salt, and vanilla. Mix until crumbly.
  4. Mix in chopped pecans using your hands until it forms a ball.
  5. Using a 2Tbsp cookie scoop, place dough on a baking sheet lined with parchment paper, about 2 inches apart.
  6. Dampen a paper towel and press a glass into it. Dip the glass in granulated sugar.
  7. Press the glass onto cookie dough to flatten to about 1/2 inch thick.
  8. Bake for 11-13 minutes until lightly browned on edges. Remove and cool completely.

Notes

  • Use soft butter for best results.
  • Soften cold butter in the microwave at 50% power if necessary.
  • For a crunchier cookie, bake for an extra minute or two, watching closely to prevent burning.
  • Granulated sugar can be substituted with powdered sugar after cooling.
