Description
Pecan Sandies are delightful cookies with a crumbly texture and a nutty flavor.
Ingredients

- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- 2 cups all-purpose flour
- ¼ teaspoon kosher salt
- 1 teaspoon vanilla extract
- ¾ cup pecans, finely chopped
- 2 Tablespoons granulated sugar
Instructions
- Preheat oven to 350 degrees F.
- Cream butter and powdered sugar together in a large bowl.
- Add flour, salt, and vanilla. Mix until crumbly.
- Mix in chopped pecans using your hands until it forms a ball.
- Using a 2Tbsp cookie scoop, place dough on a baking sheet lined with parchment paper, about 2 inches apart.
- Dampen a paper towel and press a glass into it. Dip the glass in granulated sugar.
- Press the glass onto cookie dough to flatten to about 1/2 inch thick.
- Bake for 11-13 minutes until lightly browned on edges. Remove and cool completely.
Notes
- Use soft butter for best results.
- Soften cold butter in the microwave at 50% power if necessary.
- For a crunchier cookie, bake for an extra minute or two, watching closely to prevent burning.
- Granulated sugar can be substituted with powdered sugar after cooling.
