Description

A comforting and hearty chicken soup perfect for fall, featuring tender chicken, fresh vegetables, and creamy broth.


Ingredients

  • 1 teaspoon olive oil
  • 11 ½ pounds boneless, skinless chicken breasts or thighs, diced into 1 inch pieces
  • 2 teaspoons Italian Seasoning, divided
  • Salt and pepper to taste
  • ½ cup diced carrots
  • ½ cup diced celery
  • ½ cup diced onions
  • ¼ cup diced sundried tomatoes
  • 3 garlic cloves, minced
  • ¼ cup flour
  • 2 tablespoons tomato paste (optional)
  • 68 cups chicken broth (start with 6 cups)
  • 6 oz pasta (Italian small shells recommended)
  • 1 cup heavy whipping cream
  • ½1 cup grated parmesan reggiano cheese
  • 2 ½3 cups fresh spinach

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced chicken and season with 1 teaspoon of Italian seasoning, salt, and pepper. Cook until browned.
  3. Add carrots, celery, onions, sundried tomatoes, and garlic. Sauté until vegetables are tender.
  4. Sprinkle flour over the mixture and stir to combine, cooking for an additional minute.
  5. Stir in tomato paste (if using) and gradually add chicken broth, starting with 6 cups.
  6. Bring the mixture to a boil, then reduce heat and let simmer.
  7. Add pasta and cook according to package instructions until al dente.
  8. Stir in heavy whipping cream, parmesan cheese, and fresh spinach. Cook until spinach is wilted and cheese is melted.
  9. Adjust seasoning with remaining Italian seasoning, salt, and pepper to taste.
  10. Serve hot and enjoy!

  • For a thicker soup, add more flour.
  • Adjust the amount of chicken broth based on desired soup consistency.
