Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, mix together pumpkin puree, vegetable oil, sugar, eggs, and vanilla extract until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in walnuts if using.
- Pour the batter into the prepared baking pan.
- In a small bowl, combine brown sugar, flour, cinnamon, and butter to make the streusel topping. Crumble it over the batter.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool before drizzling with the glaze made from powdered sugar and milk.
Notes
- Store leftovers in an airtight container at room temperature for up to 3 days.
- This cake can be frozen for up to 2 months; thaw before serving.
- For a spicier flavor, add a pinch of ground ginger or cloves to the batter.
