Ingredients

  • 1 baguette, sliced into 1/2-inch pieces
  • 1/4 cup unsalted butter, softened
  • 4 garlic cloves, minced (divided)
  • Salt and pepper, to taste
  • 3 medium peaches, diced
  • 1 pint tomatoes, chopped
  • 2 tbsp extra virgin olive oil
  • Juice of 1/2 lemon
  • Handful fresh basil, chopped
  • 1 cup whole milk ricotta cheese
  • Balsamic glaze (optional, for garnish)

Instructions

  1. Preheat oven to 400°F. Mix butter with half of the minced garlic and a pinch of salt. Spread onto baguette slices and place on a baking sheet.
  2. Bake for 10–12 minutes until golden and crisp. Set aside.
  3. In a bowl, combine peaches, tomatoes, remaining garlic, olive oil, lemon juice, salt, and pepper. Let marinate while preparing the ricotta.
  4. Blend ricotta in a food processor until smooth and creamy.
  5. Spread whipped ricotta on each toasted slice. Stir basil into the peach-tomato mixture and spoon over the ricotta. Drizzle with balsamic glaze if desired.
