- 1 baguette, sliced into 1/2-inch pieces
- 1/4 cup unsalted butter, softened
- 4 garlic cloves, minced (divided)
- Salt and pepper, to taste
- 3 medium peaches, diced
- 1 pint tomatoes, chopped
- 2 tbsp extra virgin olive oil
- Juice of 1/2 lemon
- Handful fresh basil, chopped
- 1 cup whole milk ricotta cheese
- Balsamic glaze (optional, for garnish)
Instructions
- Preheat oven to 400°F. Mix butter with half of the minced garlic and a pinch of salt. Spread onto baguette slices and place on a baking sheet.
- Bake for 10–12 minutes until golden and crisp. Set aside.
- In a bowl, combine peaches, tomatoes, remaining garlic, olive oil, lemon juice, salt, and pepper. Let marinate while preparing the ricotta.
- Blend ricotta in a food processor until smooth and creamy.
- Spread whipped ricotta on each toasted slice. Stir basil into the peach-tomato mixture and spoon over the ricotta. Drizzle with balsamic glaze if desired.

- Serve immediately to keep the crostini crisp.
- Grilling the bread instead of baking adds a smoky flavor.
