Description

Russian Tea Cakes are buttery cookies rolled in powdered sugar. They are also known as Snowball Cookies.


Ingredients

  • 1 cup (224g) unsalted butter, room temperature
  • 1½ cups (173g) powdered sugar, divided
  • 2 tsp vanilla extract
  • 2¼ cups (293g) all-purpose flour
  • ½ tsp salt
  • ¾ cup (85g) finely chopped nuts (toasted pecans work great)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Beat the butter with ½ cup (58g) powdered sugar until smooth and creamy.
  3. Mix in the vanilla extract.
  4. Add flour and salt; mix on low just until a dough forms.
  5. Stir in the chopped nuts.
  6. Scoop tablespoon-sized portions, roll into balls, and refrigerate for 1 hour.
  7. Place cookies 1–2 inches apart on the baking sheet.
  8. Bake 7–10 minutes, until the bottoms are lightly golden.
  9. Cool briefly until warm, then roll in the remaining 1 cup (115g) powdered sugar.
  10. Let cool completely, then roll again in powdered sugar for that classic snowy finish.
  11. Store in an airtight container for up to 1 week.

Notes

  • Don’t overbake—these cookies should stay pale on top.
  • Walnuts or almonds can replace pecans.
  • For extra flavor, add ¼ tsp cinnamon to the powdered sugar.
