Description
Russian Tea Cakes are buttery cookies rolled in powdered sugar. They are also known as Snowball Cookies.

- 1 cup (224g) unsalted butter, room temperature
- 1½ cups (173g) powdered sugar, divided
- 2 tsp vanilla extract
- 2¼ cups (293g) all-purpose flour
- ½ tsp salt
- ¾ cup (85g) finely chopped nuts (toasted pecans work great)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
- Beat the butter with ½ cup (58g) powdered sugar until smooth and creamy.
- Mix in the vanilla extract.
- Add flour and salt; mix on low just until a dough forms.
- Stir in the chopped nuts.
- Scoop tablespoon-sized portions, roll into balls, and refrigerate for 1 hour.
- Place cookies 1–2 inches apart on the baking sheet.
- Bake 7–10 minutes, until the bottoms are lightly golden.
- Cool briefly until warm, then roll in the remaining 1 cup (115g) powdered sugar.
- Let cool completely, then roll again in powdered sugar for that classic snowy finish.
- Store in an airtight container for up to 1 week.
Notes
- Don’t overbake—these cookies should stay pale on top.
- Walnuts or almonds can replace pecans.
- For extra flavor, add ¼ tsp cinnamon to the powdered sugar.
