  • Feta cheese made without animal rennet or nutritional yeast (optional)
  • Fresh herbs such as parsley, chives, or basil (optional)
  • Salsa or hot sauce (optional)

Instructions

  1. Heat olive oil in a small skillet over medium heat. Add garlic and cook for 30 seconds.
  2. Add spinach and tomatoes. Cook, stirring often, for 2–3 minutes until softened.
  3. Cook the eggs to your preference (fried, scrambled, or soft-boiled).
  4. In a bowl, combine roasted potatoes, spinach, tomatoes, avocado, and egg.
  5. Season with salt and black pepper.
  6. Garnish with feta or nutritional yeast, fresh herbs, and a sprinkle of extra seasoning if desired.
  7. Serve warm with salsa or hot sauce.
