Simple Oat & Pecan Blueberry Crisp is a delicious dessert combining oats, pecans, and blueberries.
Ingredients

- 1 cup rolled oats
- 1 cup pecan halves (about ¾ cup chopped)
- ½ cup almond meal
- ½ cup unsweetened flaked coconut
- ¼ teaspoon salt
- ¼ teaspoon cinnamon
- ¼ cup + 2 tablespoons olive oil
- ⅓ cup pure maple syrup or raw honey
- 4 cups blueberries
Instructions
- Preheat oven to 350°F (175°C).
- Chop the pecans. In a large bowl, combine oats, pecans, almond meal, coconut, salt, and cinnamon. Add olive oil and maple syrup (or honey). Stir until everything is well coated.
- Grease an 8×8-inch or 9×9-inch baking dish. Spread the blueberries evenly across the bottom. Sprinkle the oat mixture evenly over the blueberries.
- Bake for 25–35 minutes, until the topping is golden brown and slightly firm. Optional: Sprinkle extra flaked coconut on top and bake 5 more minutes for a toasted finish.
Notes
- Creamy drizzle option: Beat together 8 oz low-fat cream cheese, ½ cup light coconut milk, 1 teaspoon vanilla, and 2 tablespoons raw honey. This makes about 2 cups, more than you need for the crisp. Leftovers are great as a fruit dip.
- Shortcut: Vanilla ice cream is always a good idea.
