Description

A delicious and easy slow cooker recipe for lemon herb chicken and rice, perfect for a hassle-free dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 cup chicken broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a slow cooker, place the chicken breasts at the bottom.
  2. In a bowl, mix together the chicken broth, lemon juice, lemon zest, olive oil, thyme, rosemary, garlic, salt, and pepper.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Add the rice on top of the chicken and broth mixture.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
  6. Once done, fluff the rice with a fork and serve garnished with fresh parsley.

Notes

  • For added flavor, marinate the chicken in the lemon herb mixture for a few hours before cooking.
  • Feel free to add vegetables like peas or carrots for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
