A delicious and easy slow cooker recipe for lemon herb chicken and rice, perfect for a hassle-free dinner.

- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 cup chicken broth
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a slow cooker, place the chicken breasts at the bottom.
- In a bowl, mix together the chicken broth, lemon juice, lemon zest, olive oil, thyme, rosemary, garlic, salt, and pepper.
- Pour the mixture over the chicken in the slow cooker.
- Add the rice on top of the chicken and broth mixture.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.
- Once done, fluff the rice with a fork and serve garnished with fresh parsley.
Notes
- For added flavor, marinate the chicken in the lemon herb mixture for a few hours before cooking.
- Feel free to add vegetables like peas or carrots for a complete meal.
- Leftovers can be stored in the refrigerator for up to 3 days.
