Ingredients

  • 4 Slices of Thick-Cut Bread
  • 4 Large Eggs
  • 5 oz (about 150g) Fresh Spinach
  • 4 oz (about 115g) Feta Cheese
  • 2 Cloves Garlic
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1/4 Teaspoon Red Pepper Flakes (Optional)
  • Salt and Freshly Ground Black Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Brush one side of each slice of bread with olive oil and set aside.
  2. Heat olive oil in a skillet over medium heat. Sauté minced garlic for 30-60 seconds until fragrant.
  3. Add spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat.
  4. Transfer the spinach to a sieve and press to remove excess moisture.
  5. In a bowl, whisk eggs and mix in spinach, feta, red pepper flakes, salt, and pepper.
  6. Spread the mixture evenly on the bread slices.
  7. Bake for 12-15 minutes until the egg is set and the bread is toasted.
  8. Let cool for a minute and serve warm.
