- 4 Slices of Thick-Cut Bread
- 4 Large Eggs
- 5 oz (about 150g) Fresh Spinach
- 4 oz (about 115g) Feta Cheese
- 2 Cloves Garlic
- 2 Tablespoons Extra Virgin Olive Oil
- 1/4 Teaspoon Red Pepper Flakes (Optional)
- Salt and Freshly Ground Black Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Brush one side of each slice of bread with olive oil and set aside.
- Heat olive oil in a skillet over medium heat. Sauté minced garlic for 30-60 seconds until fragrant.
- Add spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat.
- Transfer the spinach to a sieve and press to remove excess moisture.
- In a bowl, whisk eggs and mix in spinach, feta, red pepper flakes, salt, and pepper.
- Spread the mixture evenly on the bread slices.
- Bake for 12-15 minutes until the egg is set and the bread is toasted.
- Let cool for a minute and serve warm.

- Use a sturdy bread to prevent sogginess.
- Ensure spinach is well-drained.
