Description

A healthy and delicious breakfast casserole featuring spinach and cheese.


Ingredients

  • 4 cups fresh spinach, chopped
  • 1 cup milk
  • 6 eggs
  • 1 cup shredded mozzarella cheese
  • 1 cup diced bread
  • 1/2 cup diced onion
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs and milk.
  3. Add spinach, onion, garlic powder, salt, and pepper to the egg mixture.
  4. Stir in diced bread and half of the cheese.
  5. Pour the mixture into a greased baking dish.
  6. Sprinkle the remaining cheese on top.
  7. Bake for 30-35 minutes until set and golden.

Notes

  • Can substitute kale for spinach.
  • Add cooked sausage or bacon for extra protein.
  • Allow to cool slightly before serving.
