A healthy and delicious breakfast casserole featuring spinach and cheese.
Ingredients

- 4 cups fresh spinach, chopped
- 1 cup milk
- 6 eggs
- 1 cup shredded mozzarella cheese
- 1 cup diced bread
- 1/2 cup diced onion
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, whisk together eggs and milk.
- Add spinach, onion, garlic powder, salt, and pepper to the egg mixture.
- Stir in diced bread and half of the cheese.
- Pour the mixture into a greased baking dish.
- Sprinkle the remaining cheese on top.
- Bake for 30-35 minutes until set and golden.
Notes
- Can substitute kale for spinach.
- Add cooked sausage or bacon for extra protein.
- Allow to cool slightly before serving.
